There’s a fine line between the art of refining a recipe and the stupidity of stubbornly making multiple ill-fated, futile attempts. I do know that trustworthy sources like America’s Test Kitchen will go through dozens and dozens of tries, striving for the perfect, there-is-none-better version. I do not possess that kind of patience, and The Blade certainly doesn’t want to cover the cost of the necessary supplies for that many tries. But sometimes I get an idea and I just know — I know! — it has potential, even if at first (or second or third) I don’t succeed. For a story about citrus scheduled for Jan. 29, I wanted to offer something other than the classic, but ubiquitous, lemon meringue pie or lemon drizzle cake. I thought about a pudding cake: a lovely, old-fashioned dessert that’s made by pouring boiling water over a batter before baking it.
